Earlier in the week, Karen from My Little Home and Garden made Scottish shortbread that looked so good. Normally I make mine with butter, icing sugar and flour but wanted to try something different so asked Karen if she'd share her recipe. (link to her post for it)
I had to go out and buy rice flour and fruit sugar but feel it was well worth it for the flavour. Also, after looking at a couple other recipes for Scottish shortbread, I changed Karen's ingredients of the all purpose flour to 3 cups and the rice flour to 1 cup. Mine were baked for 55 minutes.

Not being very good at freehand lines, I used a ruler to mark the squares. A number of years ago I had bought a strange looking rolling pin from Pampered Chef but thought it might be useful to roll the dough flat, it worked pretty good.

That looks very good. I've never made it like that or in a round either. I do make shortbread cookies through the year as they are a favorite. I usually ice my but didn't for Christmas. The next batch will be though. Blessings, Pamela

Her recipe sounds really good. I made my shortbread over the weekend so I'll have to try this new one another time. And yes, I can eat shortbread any time.

Shortbread is my favorite cookie and I have never made it. But think I may just give it a try. I eat it all year around and like it with a cup of tea in the afternoon. Merry Christmas and a blessed New Year. Stella

Oh, my mouth is just watering for shortbread. It is so wonderful. I am sure the addition of the rice flour makes it amazing.
